Baked Cinnamaple Acorn Squash

Happy Canadian Thanksgiving! I hope your hearts are filled with gratitude this weekend. I am thankful for saving grace, our innate drive for discovery and the beauty of honest, real, deep, loving, connections with friends, family and acquaintances alike.

Here's a simple side dish; refreshingly easy compared to some of the prep work involved in preparing a thanksgiving meal. Acorn squash is currently in season so you'll find it in just about any grocery store. Add a little cinnamon and pure Canadian maple syrup and you'll have the subtle sweet scents of fall fill your home in no time. :)


Baked Acorn Squash
Yield: 4-6 servings

Ingredients
One acorn squash, split in half, seeds removed
1 tbsp. Earth Balance Natural Buttery Spread Soy Free, melted
1/2 tsp. coconut sugar or brown sugar
1/2 tsp. pure maple syrup
1/2 tsp. ground cinnamon

Directions
Preheat the oven to 375 degrees Fahrenheit.

In a small bowl, combine the Earth Balance Natural Buttery Spread Soy Free with the sugar, maple syrup and ground cinnamon. Brush the sugar mixture all over the flesh of the acorn squash. Fill an oven safe glass dish 1/4" deep with water. Place the acorn squash in the water and bake in the preheated oven for 50-60 minutes depending on how soft you would like the squash. Baking the squash closer to the hour mark will give you a softer squash. The squash pictured below was baked for 50 minutes and was firm enough to 'cube'.
